This is anything but exhaustive.
The very first place I stayed at in Bali was Siti Homestay. The people who run it are still friends, I recommend it very highly. It's cheap (about $7 per day) and decently located. Wayan knows everything about Bali and loves to tell you how to see it.Siti Homestay

Peliatan is at the south end of Ubud, Banjar Kalah is at the first big right turn in the road as you come up from Mas. For Siti Homestay, turn left as the main road goes right and look on the right about 100 feet down.
Another great place is Sayan Terrace. It's about 5 kilometres west of Ubud and on the same ridge that the ultra luxuriouis (and correspondingly expensive) Amandari Resort is on. The view over the rishing river below is classic. Bungalows are about $35 per day. Wayan Ruma, the owner, is one of the pioneers of tourism in Bali and a real gentleman. If you stay at Sayan Terrace, be prepared to rent a car for most of your time in residence.
